Gluten-Free Flour?

Has anyone had success with a particular brand? I would love to bake some bread & muffins but the stuff I've used in the past either tastes kinda weird OR it bakes into a really tough loaf (watch your teeth!). Thanks!

    i use Doves Farm and you can also buy gluten free baking powder now. :o)

    I use Bob's Red Mill Almond flour to make pancakes but I don't know how it works for bread. Also, it's kind of pricey if that's a factor ...

    I use three flours: white rice, sweet white rice, and brown rice--usually Bob's Red Mill and Arrowhead Mills brands. I buy them at my local grocery store and at a natural food store. I also order them online. Once I used the King Arthur GF flour....but only once!

    My favorite GF baking book is Elizabeth Barone's Gluten-Free Baking. When my eldest daughter ate the sandwich bread I baked, she almost cried because it tasted "real." Barbone also has great "quick" breads--banana, pumpkin, cranberry. One of my daughters made all of our Christmas cookies from that book and the non-GF eaters couldn't tell the cookies were GF. I also use the pancake mix published in the Barbone book.

    The bread recipe I use requires sweet dairy whey--I had to order it online since no one around here carries it.

    Bob's Red Mills has a lot of different kinds of flour.. almond flour, quinoa, etc.

    I use Tom Sawyers white rice flour and Namaste (you have to be careful though, some of their stuff sucks like the biscuit recipe). Usually when I want something I just look a recipe up online. Becareful to read your packaging, if it's just a straight flour you'll need to add xanthum gum to give it a lighter texture.
