I adapted this from a regular, non "healthy" recipe, and now I'm HOOKED on these!!

La Tortilla Factory - Low Carb / High Fiber Whole Wheat Tortillas (Large), 1 Tortilla (62g)
Diced onion
Minced garlic
Chicken - Breast, meat only, cooked, roasted, 0.5 cup, chopped or diced
Old El Paso - Enchilada Sauce - Mild, 1/8 cup
Kraft - Low Fat Mexican Shredded Cheese, 1/4 cup
Dole - Shredded Lettuce, 0.5 cup
Great Value - Light Sour Cream, 1 tbsp

Saute the onion and garlic in cooking spray or a tiny bit of olive oil. Add the chicken and the enchilada sauce, and heat through. Wrap in tortilla with remaining ingredients, and chow down! :). I get the rotisserie chicken form the supermarket deli for things like this, and pull the breast meat off to use, very easy!
