What do you stuff peppers with?

Hey all, I'm making stuffed peppers tonight, i have never followed a recipe for them, i generally just throw stuff together. What do you all like to put in your stuffed peppers? I am out of ground beef so it looks like the meat of choice will be chicken....I guess that makes it healtheir

Couscous with roast veggies in it and a tiny bit of cheese0

rice would be good. and the chicken sounds delicious. you could also throw in maybe some corn or peas. hummm. just thinking about it makes me hungry for a stuffed pepper!!! hope this helps. good luck0

Try a Quinoa/Tomatoes and Sauce/Spice mixture. Cook the Quinoa, add the tomatoes and make a mixture. Stuff the peppers with that.0

I use brown rice, lean ground beef or turkey, diced onion and green peppers, and canned tomatoes. Basically--Spanish rice w/ meat.0

I made stuffed peppers w/ couscous, turkey bratwurst, spinach and garlic. And instead of baking them we used our gas grill. They were awesome!0

I make stuffed peppers with quinoa, ground turkey, onion, garlic, eggplant and a little bit of tomato paste. You could follow the same recipe with chicken!0

I just made stuffed bell peppers the other day (my fav!!!) I usually do ground beef (but chicken would be good too!) with brown rice and corn but I liked the idea of salsa and I top it with some cheese.. YUM I am coming over for dinner tonight BTW lol0

seaoned ground beef with rice.....cook it in V8.....ohmigosh...Im having it for lunch0

Try ground some fish, season it and stuff in the peppers.0

Oh. my. gosh. thos look soooooooooooooo delicious! I think this may be the winner, but I have no quinoa, but I imagine brown rice would work almost as wonderfully! I need to find a place that has inexpensive quinoa around here!0 -

I make some stuffed peppers with lentil daal- red lentils cooked down with turmeric, garlic, ginger, chilli, chicken broth & curry powder. Then add some chopped spring onions, coriander (cilantro) & spinach to the lentils once cooked. Stuff the peppers & bake.
Goes wonderfully with baked fish!0 -
I do ground turkey and get a package of low sodium taco seasoning. Fix that together and I usually mess up one or two peppers so i throw those in, red onions, jalepenos in a jar (rinse before chopping), and whatever else left over in the fridge that sounds good. Then add a dollop of salsa on top. Bake and sprinkle a tiny amount of cheese.0

I’ll only ever make mine with chicken breast not ground beef to avoid all the extra fat and processing involved in ground beef; even the lean beef and ground chicken and turkey are 2-5x more calories and fat than chicken breast.

Those look delicious! Also, check out the link that one of the ladies put up, it has a vegan recipe, I made it tonight (but added chicken and jalapeno) and it came out SOOOOOOOOO good!0 -

I use ground turkey, onions, garlic, black beans and salsa. The peppers are good for stress.0

when i had my interview with rn/nutritionist, her head almost spun when I mentioned rice. rice is anathema to her. RICE=BAD.0
