I'm stuck making cupcakes and salsa all night for work tomorrow and i need something quick and healthy for 4 people. Me, My BF, my mom, and my dad. What is something quick, healthy but also yummy I can make for dinner??? I don't want to resort to pizza!!!

    This is quick, yummy & healthy: Brown 4 boneless, skinless chicken breasts in olive oil. When brown, add a can of seasoned tomatoes (basil, garlic and oregeno), cover and and simmer till the chicken is almost done. Then add 2 cups of baby spinach on top of the chicken, cover and simmer till the spinach is just wilted. Sprinke with parmesan cheese and enjoy.
