Anyone have any good ideas for Japanese eggplant?

    You could make grilled Eggplant Parmesan. I made it last week and it was really good.

    Make a shrimp (or chicken) and eggplant stir fry with some nice garlic and oil

    I planted those one year not knowing how many one plant would produce. I quickly discovered that I wasn't really that crazy about eggplant. Baba ganoush (which I'm sure I probably spelled incorrectly) is really good, but I'd have to Google the recipe.
