Just trying to think of a good recipie tonight for a yummy, healthy chicken dinner? Any ideas?

    Chicken Parmesan

    Ingredients
    2 4-oz skinless, boneless chicken breasts
    1/4 cup chicken stock
    1 tsp Italian seasoning
    2/3 cup pasta sauce
    3 tbs grated Parmesan cheese
    Directions
    Preheat oven to 400°F. Spray an ovenproof pan with cooking spray.

    Saute chicken over medium-high heat until browned, 2 to 3 minutes per side.

    Deglaze pan with stock; add Italian seasoning.

    Reduce heat. Top with pasta sauce and grated Parmesan cheese.

    Bake 7 to 10 minutes.

    Grilled Chicken and Rice Salad

    Ingredients
    1 recipe Thyme Vinaigrette
    12 ounces skinless, boneless chicken breast halves or thighs
    1 cup loose-pack frozen French-cut green beans
    2 cups cooked brown rice and wild rice blend, chilled
    1 14-ounce can artichoke hearts, drained and quartered
    1 cup shredded red cabbage
    1/2 cup shredded carrot
    1 green onion, sliced
    Lettuce leaves (optional)
    Directions
    Prepare Thyme Vinaigrette. Brush chicken with 2 tablespoons of the vinaigrette; set aside the remaining vinaigrette until ready to serve.

    Grill chicken on the rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until chicken is tender and no longer pink, turning once halfway through grilling. (Or broil on the unheated rack of a broiler pan 4 to 5 inches from the heat for 12 to 15 minutes, turning once halfway through broiling.) Cut chicken into bite-size strips.

    Meanwhile, rinse green beans with cool water for 30 seconds; drain well. In a large bowl toss together beans, cooked rice, artichoke hearts, cabbage, carrot, and green onion. Pour the remaining vinaigrette over rice mixture; toss to gently coat.

    If desired, arrange lettuce leaves on 4 dinner plates. Top with the rice mixture and chicken.

    Thyme Vinaigrette: In a screw-top jar combine 1/4 cup white wine vinegar; 2 tablespoons olive oil; 2 tablespoons water; 1 tablespoon grated Parmesan cheese; 2 teaspoons snipped fresh thyme; 1 clove garlic, minced; 1/4 teaspoon salt; and 1/4 teaspoon black pepper. Cover and shake well.

    I like bacon wrapped chicken...hear me out:)

    Each serving is:
    one boneless, skinless chicken breast (thin cut or pounded thin)
    1-2 slices bacon (I use turkey bacon)
    2 tbsp cream cheese (the chive one is FANTASTIC!, and you can use fat free)
    couple sprays of butter ( couple sprays = no calories!)
    salt and pepper to taste

    Place the cream cheese, butter, and seasonings on one side of the chicken breast, then roll it up. Take a slice or two of bacon, and wrap it around to help secure it closed.

    Place these in a greased pan, seam side down. Bake at 400 degrees for 35-40 until juices run clear. Then place under the broiler for 6 minutes until bacon is crispy.

    I never use the broiler, it usually smells too good to wait another 6 minutes:)

    For future dinners, place 4 chicken breasts in crockpot, 1 pkg taco seasoning, 1 jar salsa and cook on low 6 hours and serve over rice of your choice. I like it because I can put it on and forget about it till supper and I've never figured out how much it is calorie wise so I'm sorry there. I figure it's chicken so it can't be too much. Enjoy.

    The nutrition info is in the food database under "slow cooker southwest chicken" I have a 1/2 c of low fat sour cream included in with that info, so if you don't add that in, just figure you are getting a little less in calories. :smile: Rice is not included in that total.
