sun-dried tomatoes, green beans, potatoes and pesto
italian sauasage and artichoke 'spaghetti' (carrots or zucchini)
steak salad with tomatoes and green onions with ginger soy-sauce dressing
shrimp and black bean salad
cabana salmon with brie
peach bombay chicken with coconut rice
kale, jimaca and orange salad
potato and green chilies tortilla patata
jalapeno-popper dip with crackers
pepper jack and potato soup
garlicky green bean and yellow peppers with pan-seared scallops and shaved parmesan
risotto salad with crab, spinach and cucumbers in a lemon, honey butter dressing
chicken with quinoa, black bean, lime and mint stuffing
zucchini parmesan bake
pumpkin, goat cheese, onion, apple, feta, sun dried tomatoes and pecan 'pizza' (cauliflower crust)
broccoli potato pesto croquette
smoked turkey, roasted red pepper and cream cheese wrap
chicken cacciatore with mushrooms and green peppers
steak, pear and feta salad
asparagus and tomato fritata
shrimp, black bean, papaya and avocado salad
jambalya
barbeque pulled pork with red peppers and coleslaw

goat cheese, avocado and red pepper quesadillas with sprouts and lime

spinach pineapple spring roll (in rice paper) with peanut sauce
hubby wants to try gluten-free for a month to see if it helps with his arthritis. i searched several places and found 35 or so recipes we will eat. anybody else want to join me? you can use the list i have (just google the recipe name and 'gluten-free' to find it) or come up with your own. if you substitute your own, please post it on here so i can add to my list of ideas.
p.s. make sure the soy sauce, tortillas, dressing, etc are gluten-free for the above recipes.

Pick up the book Everyday Paleo by Sarah Fragoso. It is full of gluten free recipes, plus a one month meal plan and exercise regime. Maybe make it your September meal plan0

Even if the arthritis doesn't go away (which I'm guessing theres a good chance it does), I'm thinking you'll see a number of other benefits if you can keep it up.
Learn to cook with veggies and meat and you're all set.0
