I was looking for some healthy mixed vegetable casserole recipes for thanksgiving, and I'm not finding much on allrecipes.com or anything :grumble: Anybody have anything interesting that they just love?

    Hi there why not try a GOOGLE search. I find almost every time I am looking for a good recipe I can find it with a google search. Good Luck and enjoy your Thanksgiving Dinner.

    Healthy and they taste great. I put leftovers into soups.
    In the summer I like roasted or grilled peppers, zucchini, onion, green beans, beets. These are even good in salads as leftovers.
    Mix it up and try different variations.

    Green Bean and Mushroom Casserole

    A re-working of the traditional Thanksgiving side dish. Extra Mushrooms and garlic hide the fact that you are using low-fat dairy products.
    40 Minutes to Prepare and Cook

    Ingredients

    6 cups Green Beans (snap is best, but if you use canned, make sure they are no salt added)
    2 cups fresh Mushrooms, in large dice, about 8 oz. by weight
    1 can Reduced fat Condensed Cream of Mushroom soup
    1/2 cup Reduced Fat Milk (1%)
    2 cloves garlic, crushed
    Dash, fresh ground black pepper
    1/2 cup French Fried Onions.

    Directions

    Preheat oven to 375 degrees.
    Cut green beans into 1 inch lengths. Chop mushrooms into dice, set aside.
    In the bottom of a baking dish, combine soup, milk, garlic, and pepper until smooth. Add green beans and mushrooms, stir until coated and evenly distributed. Sprinkle onions on top in an even layer.
    Bake 30 - 35 minutes, until onions are crispy and sauce is bubbly. Makes approximately 8 1-cup servings.

    Skinny Roasted Garlic Mashed Potatoes


    Ingredients

    1 garlic bulb, unpeeled
    splash of olive oil
    4 large potatoes (Idaho or russet)
    about 1 cup Basic Chicken Stock or low-sodium canned
    salt to taste
    freshly ground black pepper


    Directions

    1. Preheat the oven to 350°F.
    2. Place the garlic cloves in an ovenproof dish and drizzle with olive oil. Place the dish, uncovered, in the oven for 15-20 minutes until the garlic is golden brown and soft.
    3. Remove from the oven and let cool.
    4. Peel the potatoes and cut them in half. Place them in a pot and cover with cold water. Bring to a boil over high heat and simmer until the potatoes are tender when pricked with a fork, about 30 minutes depending on the size of the potatoes. Drain.
    5. Bring the stock to a boil, and turn down to a simmer.
    6. Squeeze the roasted garlic cloves to release each clove of garlic. Mash the garlic with a fork and throw the skins away.
    7. Mash the potatoes with a potato masher or fork, or use a food mill. Add the roasted garlic. Slowly add the stock until the desired consistency is reached.
    8. Adjust the salt and pepper to taste.

    If you want a lighter side take arewethere yets recipe and use cauliflower instead...

    I love garlic roasted sweet potatoes! Instead of boiling the potato bake in their skins. Mash with the roasted garlic and a little butter (I use smart balance instead) some salt & pepper. YUM. You can even do them the day before and put them into a buttered casserole dish and reheat in the oven.
