I recently saw a recipe for a low-cal strawberry shortcake dessert using angel food cake, cool whip, strawberries, and a few other ingredients, but i can't seem to find it now. wondering if anyone has this recipe and would be willing to share it?

I doubt this is the same thing but here's a cake recipe you can use to make strawberry shortcake:

1 box of Angel Food Cake mix (the kind needs water only)
2-1/2 cups of any other kind of cake mix (strawberry and pineapple are two of the best!)

Blend both dry mixes together. Store in a bowl.

When you want a piece of cake, take 1/3 cup of the dry mix, add 3 Tbsp of water, and mix with a fork. Put in the microwave for 1 minute. You can either eat warm, or for more cakey cake, chill for 30 minutes. This is 1 point on the old Weight Watcher's points system.

Because you're wanting to make strawberry shortcake, simply take frozen or fresh strawberries, mash them up a bit to create a juicy topping, add some splenda for sweetness, pour on cake and top with fat free cool whip.

This is genius! I love those microwaveable single-serve cake things (the chocolate with the raspberry syrup -OMG), but this is undoubtedly cheaper on top of healthier! Thanks!

Angel food cake is fairly low cal

I usually take 4 medium strawberries - sprinkle on 1/2tsp of sugar and mix it in..
let that sit for a few minutes then put on the foodcake and top with coolwhip

depending on how much afoodcake and coolwhip will really determine the cal value as strawberries and a tiny bit of sugar arent too bad...
