healthy chili
here is my favorite chili recipe. very very quick to make and not alot of ingredients or chopping needed.
1 TBSP olive oil
1 sweet onion diced
1 TBSP (or more) diced garlic
1 package (20z) lean ground turkey
1 28oz can black beans, undrained
1 28 oz can diced tomatoes with chilis or jalapenos
2 TBSP chili powder
1 TBSP red wine vinegar
1 TBSP dried oregano
1 TBSP dried basil
heat olive oil in stockpot, add garlic and onion. saute until softened and golden in color.
add turkey. cook until browned. at this point i like to use a potato masher in the pot to make sure the turkey is not clumped together in big pieces.
add all other ingredients directly to pot. simmer for at least one hour or longer.
this recipe is very forgiving. easy to substitute other types of beans. the nice part is i usually only have to buy the turkey, the rest is always in my kitchen...even if you are not a big oregano or basil fan, try the recipe as written, you will be happily surprised...
i like to cut some fresh cilantro on it and shred a little cheese to serve...
great on its own or as a topping to a mexi-salad.
