Mini tofu frittatas

1/2 Cup yellow onion, chopped (1/3 of a med onion)
1 Cup red pepper, chopped (1 med)
1 tsp minced garlic
salt and pepper to taste
8 oz can of slice black olives, drained
1 cup organic spinach, chopped
1/4 Cup fresh basil, chopped
16 oz pkg firm tofu, drained and crumbled
1/4 Cup grated vegan (daiya brand) or organic mozzarella cheese
1 Tbsp nutritional yeast (can be found in bulk at whole foods)
3 Tbsp soy sauce

1. Preheat oven to 375, spray 8 cups of a muffin tin with cooking spray
2. coat a large skillet with spray and add onion and red pepper. Saute for 5 minutes until soft. Add garlic and saute for one minute. Season with salt and pepper and add olives, spinach and basil. Set aside.

3. In a blender or food processor, add tofu, cheese, nutritional yeast and soy sauce. Blend or process until thick and creamy. Add tofu mixture to skillet with veggies and toss until fully integrated.

4. Scoop out 1/8 of mixture and add to each cup of muffin tin.

5. Bake for 25 to 30 minutes or until top is slightly browned and firm to the touch.
