I made this for dinner tonight and it was deeelicious!
1 FlatOut light sundried tomato wrap (90)
1/4 cup Veggie Shreds, mozzarella flavor (70)
1/4 cup Classico spicy tomato and basil pasta sauce (35)
1 cup mixed squash and zucchini
15 grape tomatoes
1 tsp olive oil
1/4 tsp minced garlic (~100)
1 small handful of spinach leaves (insignificant)
A little more than 300 calories for the whole pizza :-)
- Lightly toss the squash, zucchini, and tomatoes with olive oil and put under the broiler for 5 minutes (or until tomatoes plump)
- Spray one side of wrap with olive oil PAM and bake directly on the rack at 350* for 3-5 minutes
- Remove veggies from oven and sauté with PAM and minced garlic until zucchini and squash begin to brown and the tomatoes start popping in your face :P
- Remove wrap from oven and top with tomato sauce, veggie shreds, and sauteed veggies, then replace in oven for 3-5 minutes (until shreds are melted)
- Top with spinach, cut into pieces, and enjoy!
Here's a link to a picture of it over at my fitness blog: http://acciomuscles.tumblr.com/post/8578656046/dinner-1-flatout-light-sundried-tomato-wrap-90
