I am a server. I am on my feet moving from the time I get there til an hour after close. How do I even begin to calculate how many calories I burn a night?

It's part of your TDEE. You're either lightly or moderately active, depending on everything you do when you aren't working. No need to try and figure out how many calories you burn from working, as it's automatically added in when you select your goals.

the best way would be to get a heart rate monitor and track it using your heart rate...

another accurate way would be to get a FitBit for $100. They have them at REI and sometimes REI has a 20% off sale. That's how I got mine. It's like a high-tech pedometer, that connects wirelessly to a computer and determines your calories burned based upon the intensity (physical) of your movement. Google Fitbit for a better explanation. It's pretty cool technology. Particularly for your needs. I wanted to know the same thing, how many calories was I burning pacing around my kindergarten classroom/playground all day. It turned out I was going 5 miles a day within the classroom! And burning 3000 calories.

as for MFP, I'd enter in your activity level as high. then just track extra exercise you do.

The calories you burn at work are part of your lifestyle. It should be at moderately active or active depending on just how busy your job is. If you count it as exercise as well it's getting counted twice.
