Linguini with roasted tomatoes, garlic, goats cheese and roc
I have a fettish at the moment for roasted tomatoes and had this yesterday for lunch and it was delicious
50g Linguine or any thin pasta
20g goats cheese
3 - 4 slow roasted tomatoes
half a red onion
1 clove of garlic
20g soft goats cheese
handful of pinenuts
handful of rocket (or arugula I think you call it in the US)
splash of Balsamic
Cut up your tomatoes and put them on a baking tray, crush and cut up the clove of garlic and sprinkle over the tomatoes with a little salt, and put them in a low oven for an hour with the half of red onion (and you can then turn it off and leave them in there).
When finished take the pips out and peel them (just makes it easier when eating) and cut the flesh thats left into chunks and slice the roasted onion
In a frying pan, dry fry a handful of pine nuts just to bring out the toasty taste.
Cook the pasta and when al dente drain then add the tomatoes, (with any garlic left stuck to them) the pine nuts, and crumble half the goats cheese and stir for a minute, finally tip into a bowl, add a good handful of rocket and stir in, finally crumble the last bit of goats cheese on the top and a tiny splash of Balsamic Vinegar across the top....
Very very very nice and comes in at only 400 calories... enjoy
