Raw or Cooked veges?

I have been eating raw veges and vege/fruit juicers made fresh for about a month now believing that it was healthier for me. I read that cooking kills the nutrients and enzymes. But is it true? I do feel better since I have started on my diet, but honestly my stools have been very loose and I often have gas. Heres what Dr Wilson says about raw veges:

2. Cooking also breaks down fiber in foods, making a lot of nutrients, especially minerals, more available. Minerals are not damaged by cooking, contrary to what some say. This is particularly the case with grains and root vegetables. These are almost impossible to digest raw if they are very fibrous or very starchy

5. Humans cannot digest cellulose as well as cows, horses and other grain and root eaters. This is just a fact and not to be debated. These animals also eat huge quantities of raw food, which is necessary because it is less concentrated. Few people want to spend their day eating all day.

So our stomachs arent designed to digest raw veges?!

  • I have read that the best way to consume our veggies is steamed, not boiled, not baked, not grilled. Lots of opinions out there in the scientific community.

    i belive it kills some but not that many...as long as you are having your veggies frozen or raw it will benifit you greatly!

    There are a couple things I've heard/learned that I'll share with you.

    1. Digesting fiber: fiber is just a carbohydrate like sugars, but the bonds in the carbohydrate are different than those in what we call sugar (alpha va beta bonds). We don't have the enzyme to digest fiber, because the enzymes in our bodies don't digest the beta bonds. However, things like termites, do.

    2. Yes, some vitamins are more available after processing. Lycopene in tomatoes is more available. Some veggies are better off being cooked for releasing certain vits and minerals. Interestingly in the same veggies (like carrots I think were one) after cooking other vits were also found to be lower.

    And for entertainment there was a Food Network show that looked at food myths and such. One of the eps did a thing with cooking veggies and their vit content.

    One last thing, I know some other ppl who have tried a raw diet and also had some tummy issues.
