A Vegetarian Diet???

Can someone recommend a good vegetarian cookbook? I want to experiment with my diet to see how different foods make me feel. I also want a diet that keeps me both thin AND as healthy as possible. I'm interested in checking out a good vegetarian cookbook or "lifestyle" book that will teach me the basics, give me tasty and practical recipes, and show me how to lead a satisfying vegetarian lifestyle. Anyone have any good suggestions?

    I want to do the Pescatarian diet, veggian with fish, but I need to get my life in order. Can some one mention one for me too??

    Personally, since I'm impatient and like to do more eating and less preparing to eat (I'm not saying that's right - I'm just saying it's the way I am!), I have "Meatless Dishes in Twenty Minutes," by Karen Levin and "The Starving Student's Vegetarian Cookbook," by Dede Hall.

    (Neither of those has fish, actually, I just checked.)

    Honestly, what I do now since my computer is right by the kitchen is look up recipes online, then go back and forth, to and from the computer, while I'm cooking. I like to look up several of the same recipe (black bean soup was my last one, for example) and take bits from each and create something...unique.
    cooks.com, recipes.com, epicurious.com...there are many, many sites. I usually start with a google search and see what comes up.

    1000 Vegetarian Recipes by Carol Gelles. I don't know if the link above works, but you can just search for it and read reviews at Amazon.com. It's a simple book with, well, 1000 vegetarian recipes to get you started. I also have a large selection of regular cookbooks, and of course, the internet.

    There are lots of great veggie options out there. Something I eat for a quick veggie entree is the meatless "chick'n" products, etc. that can be found in the frozen foods section of the grocery store. And, for cooking with tofu I recommend firm or extra firm in stir-fries. Anything else will just crumble.
