Chicken and Rice soup- a trusty go-to recipe

As part of the kick the *%"*& out of August challenge we have to post a favourite recipe, this is my other halves favourite and he always sneaks back into the kitchen and goes quiet as he's chowing down on the left overs before I realise! I made this today and he did this... :laugh:
So its a chicken and rice soup, high in protein and gets some sneaky veg in there. Also I was watching a science program about weight loss and they did a study which shows that soup fills you up more than the same ingredients eaten solid!!
Ingredients
Chicken Breast Fillets, 2 fillet
Basmati Rice - 1 cup
Carrots - Raw, 1 cup, chopped cubes
Tesco - Cellery Stalks, 100 g
Jersey Royal Potatoes 100g
Knorr - Chicken Stock Pot As Sold, 2 pot/ 28g (or chicken stock)
Generic - Onion, Sauteed, 1 cup
Total (4 servings): 1694kcals 236carbs 13fat 84g protein
Per Serving: 282kcals 39carbs 2g fat 14g protein
Boil the chicken breasts until cooked
While chicken is cooking:
Saute onions, add celery carrots, and potato
Add stock, and cup of rice,
Simmer until rice is cooked,
Chop chicken breasts into cubes and add to the soup.
Blend. Usually I sift out some chicken, rice and veg, blend the rest and then add back the solid bits, this gives it a bit more to chew on!
Season with salt and pepper.
