Pancake lovers??
I just tried this recipe, which I bookmarked ages ago and couldn't wait to get around to.

I substituted unsweetened Almond Breeze for the soy milk, unsweetened applesauce for half of the oil, and separated the egg. I added the yolk to the milk mixture, mixed it into the flour mixture, and then whipped the egg white a little bit before adding it finally. It was a little hard to get them to cook thoroughly because they puffed up a lot and I didn't oil the pan much so they smoked/charred a bit (I'd refine that technique). I ended up with five largeish and one smallish pancakes. I entered the recipe as 11 servings (1 per smallish, 2 per largeish--very rough estimate, but oh well) and got that one serving had 108 cals, 12 carbs, 6 fat, 2 protein, 1 sugar, 1 fiber. Not bad for a pancake. I'm thinking about freezing the leftovers and thawing them as grab-and-go snacks or quick breakfasts (I just had three servings worth with the other half of the applesauce cup on top, om nom nom--349 cals).
