Instead of a crust, you could use some shredded veggie or veggies that have been sauted first over the stove. We made some mini ones this weekend in a muffin pan. They were really good.
-sauted ham and veggies (whatever you like) divided into muffin pan sprayed with cooking spray
-pour egg mixture (9 beaten eggs, milk, salt and pepper)
bake at 400 for about 20 - 25 min.0 -

I use a coating of corn meal with a bit of melted butter or I use this ^ brown rice/rice in general will become a dear friend when you go GF (rice flour [3 different kinds] is awesome).0 -
