quiche with crust or without?

    I've been making a varation on quiche without a crust b/c the crust is so bad for you. I have been using shredded frozen hashbrowns (no fat kind) and spray the bottom of the dish with Pam, then put some shredded potatoes in with some salt and pepper, and bake for just 10 minutes or so before dumping the quiche ingredients on top. Makes a nice potato crust. I'm actually eating some right now:smile:

    I don't really make quiche, but my mom always bought premade, low cal, low carb pie crust and rolled it as thin as she could get it, fit it in, and cut all the excess off. The thinner you roll it, the less you'll get with the slice and it'll still hold up.

    The unhealthy version of myself likes the crust. The healthy version likes it without! Also, I think it depends on the quiche! I have a "Tunisian Tagine" which is not a stew like in Morocco and this is made without the crust and I loooove it that way (can't imagine it with a crust).

    That sounds good!

    I like to make frittatas. You can make them really easily and they'll be really healthy (or not so much, if you prefer).
