Game Recipes anyone???

Hi all......I'm new to cooking game meat....but for see myself doing it more often in the future......anyone want to share any recipes with me?????

I usually marinate my deer steaks in red wine and onions with pepper.........Bear chilli tastes great....same as regular chilli just switch up the meat. Pasta sauce with bear meat is okay....depending on the age of the bear!

My brother makes stuffed deer peppers...which I don't know how to make but they are fantstic...will have to get the recipe!

Anyone one else like game meat??? Whether you buy it or hunt it on your own???

    Venison is usually the only red meat we eat. Currently we are out but that will be taken care of in November. Venison that comes from farm land and properly taken care of after it is taken, does not in my opinion need to be disguised with marinades. That will vary depending on the location where it is taken and the expertise of the hunter and butcher. We have been doing this for over 30 years. I butcher it myself because I prefer the way I do it to the results we have gotten from butchers. My main complaint has been steaks cut from meat that really should have been stew meat. Also, I bone out the meat and the butchers I have dealt with don't do this. I don't want to transport and freeze bones.

    I treat the meat basically like very lean beef. If you like well done meat, you are pretty much restricted to slow cooked braised roasts, stew meat and salisbury type steak methods. Do not try to pan fry a venison streak to well done or you will have a piece of shoe leather.

    Our family prefers rare steaks and venison works perfectly for this. I use less tender cuts for stew and burger. Trim all the fat you can from the meat - most of which is along the backbone and covering the rear quarters and stomach area. The fat from venison is very greasy and stronger flavored than beef fat. If you want fat added to your ground burger, add beef or pork fat. We do not do this but some people do. Again, we eat meat very rare so it is not necessary for us to do. Use any favorite recipe for the stew; it will work for venison just as good as beef. To sum up - any recipe that uses lean beef can be made using venison.

    I assume you are mainly concerned with venison.. I have hunted, cleaned and cooked many other game animals and birds but that doesn't seem to be your main focus. Hope this helped a bit.

    I frequently cook deer, pheasant, & recently tried bear meat. It took me years of hit & miss to get a deer roast perfected. This is my EASY no-fail roast recipe:

    Any deer roast 3-4lbs
    1 can of cream of mussrooms
    1 envelope of onion soup mix
    a few squirts of worchestershire
    a few squirts of soy sauce
    1 large onion, sliced

    Clean roast well, place in crock pot. Layer onions on top, dash worchestershire & soy sauce on top. Mix cream of mushroom soup & onion soup mix together, pour on top of roast & onion. Cook on low 6 - 8 hours. Enjoy

    I love to make grilled roast sandwiches with the leftovers. Use a good hearty bread, & layer red onions, shredded carrots, cheddar cheese & the roast. Grill it like a grilled cheese or in a panini maker. This sandwich is phenominal!!! I actually make the roast just so I have left overs for this sandwich. I LOVE IT>

    But WAIT!!! Here is he ultimate deer meat recipe!!!

    Use a tenderloin or back strap, those are your tender cuts, good for grilling. cut the meat in long 1 or 2 inch thick strips. You can marinate them in italian dressing or just season like a steak, either way is good. Cut the stem & remove seeds of a few jalepenos & stuff them with cream cheese. Then you're gonna wrap the venison around the pepper (pinwheel style) then wrap semi-cooked bacon around the deer meat. Secure it with tooth picks or I usually put a skewer through it. You can put 2 'pinwheels' on a skewer. Throw it on a hot grill & cook like a steak. I like mine medium rare to rare, but it's best when the bacon gets crispy, thats why I pre-cook it a little, just throw it in the microwave a few seconds.

    So, these are just a few of my favorites, but I'm always looking for new ways to cook game meat since my boyfriend keeps bringing home dead animals!! Anyone out there with tips & recipes to share, please add me as a friend.

    I never ate game meat until I moved to the woods, boy was I missing out!

    I made a wonderful venison roast last year, marinated and basted it with a combo of garlic, stone ground mustard, soy and EVOO. The recipe was given to me by the hunter.

    I will feel a twinge of guilt when I dine on venison this year. Just last week as I was driving I saw a deer approach the side of the road so I stopped, then 2 fawns (baby deer) came out of the woods and the three made their way across the road. The fawns were tiny and so adorable!!! Really beautiful animals.

    We use venison just like beef. We have ground venison that we use like hamburger in spaghetti sauce, chili, tacos, burgers, etc. With the steaks/chops, we've sliced it to make fajitas, cubed and put into chili or sauces, grilled and sliced into small steaks. One of my favorites is to top the chops with galic salt and lots of fresh ground pepper. Then top with several slices of butter. Roast at 400 degrees for 30-45 minutes. Slice and serve. I've also made a marinade with jalapenos, ginger, soy sauce, garlic, and a bunch of other stuff I can't remember right now. If that sounds good to anyone, I can look up the recipe when I get home.

    The only drawback I've found with venison is that it continues to cook after you've taken it out, so you have to be careful not too leave it in too long. If you do, it gets dry and more"game-y" tasting (medium rare is about perfect).

    I have a feeling we're going to end up with bear this year, so I'd love to see what people use it for. I've had it in chili and spaghetti sauce before, but would love to know some other uses, or flavor combinations that work well with it.

    Hi thanks for the input.....I'm a hunter mainly for deer, bear and moose. Fairly new...this is my fourth year in but only had chance to hunt a few weekends out of every year so haven't been out much at all as there are so many restrictions bout hunting on sunday depending on location. 1st year hunted got a deer....second year went out for bear....got three in our group...not me though.....last year moose....came close but nothing!! Bird hunt once in awhile...but hard to get out there all year around to have a shot at everything when you have a full time job and a house to renovate!! LOL

    I'm looking to learn as much as I can as I plan on making this a life long interest !



    We're hoping to bag one of each this year...so am being proactive on different and new ways of cooking!

    I have had it this way, but with the addition of potatoes and carrots to make it more stew-like. Yummy!!

    LOL Don't feel guilty!! Coming from a hunter....yes....I hunt...but I still appreciate the beauty of nature and its animals! I can appreciate driving and seeing a Doe with her fawns as well!!

    We use ground venison any way you would use hamburger. We also grill our steaks (venison, antelope, buffalo) with seasonings or worshetshire sauce, liquid smoke and lots of different seasonings. THe meat is often fine with just some seasonings. Also, take venison, grind it up with some parmesan cheese and garlic and spread that (very thin) inside a thin piece of steak. Roll and pin with toothpicks. Season with garlic, salt and pepper and sprinkle EVOO on it and grill. Yummy.

    I so agree with you Panteragirl. Some of my favorite moments outdoors have been while hunting. One misty morning I saw around a dozen deer come out of a woods, form a big circle and prance around a couple of turns around the circle and then peal off and go back into the woods. Now there is a sight I will never forget. It seemed like they were playing and perhaps they were.

    When you work for your food you appreciate the source even more I think. I was raised on a farm in Michigan and have first hand experience that raising food, both animal and vegetable, can be a challenge.

    There are so many deer now in Michigan, where we hunt, that accidents caused by deer in the roads is a major problem. If hunters aren't allowed to keep the population down, they boom until disease and malnutrition cause the population to crash.

    Same here.....I had a little tiny bird sit on the barrel of my rifle hanging out with me and singing to me!!..it hooped up the barrel infront of my face and kept singing....it was such a beautiful moment I will never forget!

    There are alot of deer on the out skirts of the city here in Southern Ontario....Its the same thing...with car accidents and everything is very regulated.
