I love flank steak, but you have to prepare it correctly or it becomes tough. I removed all excess fat and the outside membrane, then I marinade it in balsamic vinegar and garlic. You could marinade the steak in anything, I just happen to love the balsamic vinegar. I also grill the steak on the grill, obviously to your preference. Good Luck w/it and enjoy.

My favorite is just marinating it in teriyaki sauce, served w/ brown rice & veggies. We recently did a flat iron steak (very similar) with a dry-rub southwestern seasoning, grilled it w/ peppers & onions and made fajitas w/ low-carb tortillas, and served with a black bean & corn salad. It would make good French Dip Sandwiches. Grilled, sliced on a salad would be nice w/ some blue cheese. You can flatten it and spread some spinach, shredded carrot, and shredded parm/mozzarella, roll it up and tie it and then bake/grill, then slice it in rounds.

marinade in garlic, onion, low sodium soy sauce, and a little Almond butter.

Grill on high heat for a good sear and a medium center.

I know it sounds crazy, but its delicious!

throw some chimichurri on it! I make mine with a cup of packed cilantro, 1/4 cup of parsely, a few cloves of garlic, a couple shakes of crushed red pepper, about 1/4 cup of red wine vinegar, and a couple of TBSP olive oil (if needed depended on how you like the consistency) The BF and i love it thick to spoon onto steaks (or chicken or fish or veggies....) but some like it a little "soup-ier"

    slice on the diaganal (sp)

Yup! Just like with London Broil, how you slice the meat (against the grain) is the key to keeping the meat from being tough.

The best way is to cook the flank steak with the outer membrane to keep it moist, and juicy Remove it before eating.
