Ok so part of Week 2's Weekly Challenge was to submit our favorite recipes with nutrition info. So here is where you can post them. The rules stated if someone already posted the recipe you were going to post you must post something else.

  • Grilled Chicken/Shrimp and Ratatouille

    1/.5 Egg Plant
    1/.5 Zucchini
    1/.5 Bell peppers
    1/.5 Onions
    1/.5 Tomatoes

    Baked/Broiled/Grilled chicken breasts (fillets/shrimp) for an easy meal that's low in fat and calories but big on nutrition and flavor.

    For an all-grilled meal, warm some bread on the grill and toss fresh fruit such as pineapple rounds or halved peaches on the barbie for dessert.

  • No Guilt Strawberry Pie

    Ingredients

    1 (.8 oz.) box of Jello-O brand Sugar Free and Fat Free Cook & Serve Vanilla Pudding
    2 Cups Water
    3 Cups Strawberries, sliced
    1 (0.3 oz.) box of Jello-O brand Sugar Free Strawberry Jello
    Fat Free Cool Whip (optional)

    Directions
    In a medium saucepan, add water and pudding mix. Bring mixture to a boil. Remove from heat and immediately add the strawberry Jello, stirring until dissolved.
    Set aside and let cool to room temperature. Place sliced strawberries into the bottom and up the sides of a deep-dish pie plate. Pour the cooled pudding mixture over the strawberries and refrigerate until completely chilled. Top each piece with Fat Free Cool Whip if desired. (Makes approximately 6 servings.)

    bulgur w/ dried cranberries

    1 cup coarse-ground bulgur
    2 cups (1/4-inch) cubed peeled English cucumber
    1 cup dried cranberries
    1/3 cup thinly sliced green onion
    1 cup finely chopped fresh flat-leaf parsley
    1 teaspoon grated lemon rind
    1/3 cup fresh lemon juice
    1/3 cup extra-virgin olive oil
    3/4 teaspoon kosher salt
    3/4 teaspoon freshly ground black pepper
    Preparation

    1. Place bulgur in a large bowl; cover with 2 cups boiling water. Cover; let stand 30 minutes or until liquid is absorbed. Fluff with a fork. Add cucumber and remaining ingredients; toss gently to combine.

    Ok, I tried this recipe:
    1 cup of canned pumpkin
    3 scoops jillian michaels protein powder
    8 packets stevia
    3/4 cup of egg whites
    2 tsp of baking powder
    1/2 cup of whole wheat flour.
    I ended up with 15 muffins that I cooked for 20 minutes on 350. They are ok tasting, an eggyish texture but yummy as a snack. I do not know if anyone wants to try this but my eggy muffins are 56 calories a muffin and about 0.5 gms of fat and 6 gms protein. there are a nice refresher but taste good heated up. I do not know who wants to be brave and try it. Ryan Miller had one and loved it and took some to work! They are not as proteiny muffins since I added whole wheat flour but each muffin is 6gms protein and 6 gms carbs. not bad for getting energy though.

    I've made these a lot of times. They are easy to make, tasty, and freeze/thaw really well too. I've made them as the recipe below says but I've also substituted veggies with whatever's left in my fridge and they've always turned out well. Hope you enjoy. I'm really looking forward to trying the recipes you all submitted. Nice idea to post these.



    Veggie Mini-Quiche Cups

    Ingredients:
    3/4 cup liquid egg substitute or 3 large eggs or 3 /4 cup egg whites
    1 package frozen chopped spinach (10 oz.) or one large bunch fresh spinach
    3/4 cup shredded reduced-fat cheese
    1/4 cup diced red or green peppers or mixture of both
    1/4 cup diced onions
    Dash of hot pepper sauce
    Salt/pepper to taste
    Directions:

    Makes ~12 quiche cups

    1. Heat oven to 350 degrees
    2. Spray regular-size muffin tin cups with the cooking spray or the quiches will stick to the baking cups.
    3. Thaw and drain spinach. Wring it out well. If using fresh spinach, steam it in the microwave, press out all juice, then chop.
    4. Mix the spinach, eggs or egg substitute, cheese, peppers, onions, hot pepper sauce, salt/pepper in a bowl.
    5. Fill the muffin tin cups with the mixture.
    6. Bake at 350 degrees for ~20 minutes. Done when a knife inserted in the middle comes out clean.
    7. Remove from cups to serve.
