Spicy Chicken Chili
Spicy Chicken Chili - From the Portland's Palate Cookbook(A lot of great recipes)
I get requests to make this over and over. It is SO easy but delicious! It is very easy to double too.
I don't have the exact calorie count on this but did put it in Spark one time and I think it was around 250 cals per serving with it being 6 servings. Obviously using olive oil will add more.......if you want, just leave that out and use a non-stick pan or pam instead which will save quite a lot.
Also, the ingredients are nothing but good stuff. This is a hearty, tasty and satisfying meal. I usually put a dollop of ff sour cream on top.
I use the diced tomatoes with green chilis and always add extra cumin and chili powder because I like it spicy. Also, making it a day ahead will allow the flavors to blend even more.
Yield:
4 to 6 servings
2 tablespoons olive oil
6 chicken breast halves
1 cup onion, coarsely chopped
1 green bell pepper, seeded, deveined and chopped
2 garlic cloves, minced
2 (15 1/2 oz) cans Mexican-style stewed tomatoes (I usually use the diced tomatoes with green chilis)
2 (15 1/2) oz cans pinto beans, drained
1/2 cup picante sauce (hot, medium or mild)
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
In a large saute pan over medium-high heat, warm oil. Add chicken, onion, pepper, and garlic. Saute 5 to 7 minutes or until chicken is no longer pink.
Add remaining ingredients and simmer 20 minutes.
Done!!

I make my pinto beans just like this but without the chicken. I serve with warm pita bread pockets. Yum!0

Wow this sounds good. I'll bet it would work with leftover turkey, or pork loin would be good instead of the chicken.

OK, I made this for tonight!!!!!! My fridge is bare, haven't stocked up yet (was on vacation) but I have most of the ingredients! No green pepper and not enough beans, so I added a can of fat free refried beans. It smells yummy and will be great for dinner on this cold snowy day!!

Ok, just finished dinner and will add the recipe w/ my changes.
2 tablespoons olive oil (I used 1 T. oil)
6 chicken breast halves (I used 3 larger chicken breasts)
1 cup onion, coarsely chopped
1 green bell pepper, seeded, deveined and chopped (didn't have)
2 garlic cloves, minced (I used 2 T. minced garlic)
2 (15 1/2 oz) cans Mexican-style stewed tomatoes (I used the diced tomatoes with green chilis)
2 (15 1/2) oz cans pinto beans, drained (I used 1 can of pinto, 1 can of FF refried beans, and 1 can of black beans)
1/2 cup picante sauce (hot, medium or mild) - I used a whole 16oz bottle of medium salsa
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt (I didn't add the salt, but added some garlic & onion powder)
This was SOOOO good. I just had the white chicken chili at Ruby Tuesday's on Saturday and this was VERY similar!!! (and not $3.99 a bowl!! :huh: ) My dh topped his w/ some tortilla chips, sour cream, and shredded cheese and he loved it too!

I don't know about that. I was raise on Wolf brand Chili. But this does sound nice and a lot less fat than wolf. I do my pinto beans sorta like this -the chicken.0
