(Great book, by the way, Weil discusses the glycemic index, omega-3s, and the proportions of fat, carbs and protein in the ideal diet. He goes into detail about better and worse carbs, better and worse fats, better and worse proteins.)

    P.S. Study up on omega-3s, an absolute requirement in sufficient amounts for good nutrition. Sources are: Fish oil, flaxseed oil, flax seeds, hemp seeds, herring, mackerel, purslane, salmon, sardines, soybean oil, soybeans, walnut oil, walnuts. These fatty acids protect the nervous system and promote mental health. Also important are omega-6 sources: Corn oil, grapeseed oil, meat, peanut oil, poultry, safflower oil, sesame oil, soybean oil, sunflower oil. Everyone should do a little research and start adding these EFAs (essential fatty acids) to their diets daily.
