Spicy BLT Soup--Suggestions welcome

Found the recipe below in Everyday Food earlier this summer. Upon entering the indigents into the "My Recipe" program, I never realized how much calories/fat the olive oil cost. Any suggestions on how to improve it? (Don't worry, I use bacon and the croutons VERY sparingly)

Andrea's Spicy BLT Soup
Everyday Food Summer 2011

2 lb assorted tomatoes, finely chopped
1 small cucumber, coarsely chopped
2 medium Fresno chiles or jalapeños, stemmed and chopped
½ small yellow onion, chopped
1 garlic clove, smashed
2 tsp white wine vinegar
1 slice white bread, crust removed and torn into pieces
½ c extra virgin olive oil
½ tsp sugar
croutons, crumbled cooked bacon, and sliced lettuce, to garnish

Sprinkle tomatoes with ¼ tsp salt and let sit for 10 minutes. In a blender, combine the soup ingredients and purée until smooth for about 1 minute.

Press through sieve and discard solids. Cover and refrigerate until cold, at least 2 hours and up to 3 days.

    I would switch out the bacon for turkey bacon (LOVE IT!) very low cal...low fat. I wonder how important the olive oil is in this recipe? How much would it change the taste if you omitted it?

    Maybe instead of the oil you could use low sodium veggie broth?

    I would exchange chicken broth or beef broth for the oil and just before serving drizzle maybe a teaspoon of olive oil on the top to give it the flavor
