Oatmeal Muffins

2 large egg whites
1/3 cup pure maple syrup
3 Tablespoons fresh orange juice
1 cup skim milk
1 Tablespoon vanilla extract
1 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1 Tablespoon orange zest
1 1/2 cups rolled oats
1 cup whole wheat flour
1 teaspoon baking powder
1/4 cup chopped pecans
1/4 cup dried cranberries

Preheat the oven to 350 degrees F. Spray a 12 hole muffin tin with nonstick cooking spray. Put the egg whites in a large mixing bowl and whisk until frothy. Whisk in the next 9 ingredients. Stir in the flour and baking powder. Fold in the pecans and cranberries. Fill the muffin tin 2/3 full. Bake for 20 mins, or until the muffins are firm in the center.
