Aubergine, beef tomato and low fat mozarella stacks with pesto are godly. I also think you can't go wrong with some fresh salmon, home-made salsa and vegetables. Probably my favourite is sharing a healthy home-made pizza with salad and tzatziki.

Nasi Goreng- indonesian fried rice with prawns & chicken. I make it healthier by using brown rice and using spray oil. I usually use a bought made nasi goreng paste and use plenty of veggies- peppers, spring onions, mushrooms & garnish with coriander, cucumber stick & tomato wedges with lots of lime juice & chopped chillis. NOM!!!

Fake 'crispy duck' pancakes- use shredded cooked chicked (Brown or breast meat) and season liberally with chinese 5 spice powder. Fry in a hot pan with a little spray oil until the shredded bits begin to get crispy. Serve in vietnamese syle rice pancakes (Or buy chinese style ones for slightly more cals) with plenty of finely sliced spring onions, cucumbers and hoi sin sauce.
