i want to make pico de gallo

I know it can't be that hard...but I've never done it!

I LOVE Chipotle's pico and would like to make my own at home.

    That's how I make it-chop it all up, salt to your liking and enjoy.

    Ingredients
    1 1/2 cups seeded, diced tomatoes
    1/4 cup diced red onion
    1 tablespoon diced jalapenos
    1 tablespoon minced garlic
    Juice of 2 limes
    2 tablespoons cilantro, plus extra for garnish
    Salt and pepper

    Directions


    In a bowl combine all ingredients.

    I just chop up cillantro, onion and tomato (heavy on the cillanto) and try to get the right color combination. That's just me, though. I know what you mean about the stuff at Chipotle. Awesome! I'm going to follow this thread to see what everyone comes up with. Thanks for posting it.

    Awesome! Thanks everyone! Now-anyone have any ideas on how to get my tomatoes to ripen up on the plants quicker??? I have a TON of green tomatoes out there.

    2=Red bell peppers
    2=Orange bell peppers
    2=Green bell peppers
    I grow lots of hot peppers 12-14 types per year and add lots and like them hot.
    2=Yellow onions
    2=White onions
    2=Red onions
    Chop all onions and soak in lemon or lime juice for a couple of hours
    1/4 cup after being chopped fine Cilantro I like LOTS
    4 cans=Diced tomatoes with green chillies
    4 cans=Black beans
    oops almost forgot 3 good size extra firm tomatoes.
    Key is a chopper that cut everything to the exact same size this allows for a nice mix in each spoon or scoop full.

    I do not salt anything but to each there own.

    This stuff makes for a great start to the day over a cup of scrambled egg substitute or farm eggs.
