Vegetarian Crockpot Meals- Please help!

Does anyone have any vegetarians crockpot recipes out there?
My husband is a vegetarian (kind of) and I am not. It would be easier if I could cook some of his meals (and mines) in the crockpot instead of always cooking two different meals on the stove top. How do other people deal with this problem? He does eat fish and eggs just not meat.

I am not vegetarian but I do like to eat a few vegetarian meals a week. I like Judith Finlayson's book.....125 best Vegetarian Slow Cooker recipes. I have liked everything I have made from this book.0

I've been vegetarian all my life and vegan the past 4 months, I like to make lots of slow cook meals =] .Add a ton of veggies like chopped carrots, celery, potatoes, onion, whatever else he likes, then a some tomato paste and water. That would make a really yummy soup. ohsheglows.com has a TON of awesome recipes there may be a crockpot one in there too =]

Yoohoo! Vegan here! Feel free to add me if you need more veg-head ideas. I was just a plain 'ol vegetarian for a year pre-veganism so I've got some lacto-ovo experience as well. Also, there were way too many hyphens in that sentence.
The recipe below is vegetarian and promotes some serious weight-loss. Particularly after a workout. Oh, and it tastes like I'd imagine a slow-cooked angel cooked by Emeril would taste. It looks like a lot of ingredients but it's really not... Just a lot of spices. i.e. lotsa flavor, sans the kcals.
5 - 6 cups unsalted soup stock
1 cup brown lentils
1 Tbsp olive oil
1 Tbsp fresh garlic clove, peeled & minced
1 Tbsp fresh jalapeño pepper, seeded & minced
2 - 3 cups peeled sweet potatoes or yams, cut in 1 inch pieces
1 cup diced celery
1/2 cup diced green pepper
1/2 cup diced red pepper
1/2 tsp dried thyme
1 tsp dried basil leaf
1 tsp paprika
1 tsp gr coriander
1/2 tsp gr cumin
1/2 tsp gr fennel
3 Tbsp tomato paste
Fresh gr pepper to taste
Optional: Braggs Liquid Aminos or soy sauce
Optional: 1 tsp light molasses
1/4 cup minced fresh parsley
Instructions:
Crockpot Cooking: Roast the garlic in the oil, then add all ingredients to a cold crockpot, cover and cook on low for 8 hours.

lentils veggies (chunky) etc along with a curry sauce (homemade without cream) would be scrummy slow cooked.
Chinese would work too
Spag bol with fake mince works for my kids / hubby and me (I'm veggie they're not) and even veggie hotdogs in french bread sometimes.. you could have less bread.
If you like beans (as in 'real' beans not just in tomato sauce) you can add bits like this.
Falafels are gorgeous in pitta bread with salad etc.

Love the crock pot! I have a great recipe book with a section for vegi main dishes. A couple easy ones...

caribbean sweet potato and bean stew
2 med s. potatoes cut into cubes
2C cut green beans
1 can (15oz) black beans rinsed and drained
1 can (14.5oz) vegi broth
1 small onion sliced
2t jerk seasoning
1/2 t dried thyme
1/4t salt
1/4t ground cinnamon
Pur all in pot and cook on low for 5-6 hours
serve with toasted sliced almonds
stuffed peppers
1 can (15oz) black beans rinsed and drained
1C shredded jack cheese
3/4C salsa
1/2C corn
1/2C chopped green onions
1/3C uncooked long grain rice
1t chili powder (I use at least double)
1/2t cumin (I use just a ton of cumin... love cumin)
Mix all together, cook on low for 4-5 hours
Serve in pepper, makes about 4
Bean and vegi burritos
2T chili powder
2t dried oregano
1/5t cumin (again, I use lots more)
1 large sweet potato diced
1 can black beans
minced garlic
1 medium onion thinley sliced
1 jalapeno pepper minced
1 green pepper chopped
1C corn
3T lime juice
1T cilantro
Mix all seasonings together
Layer potato, beans, half of seasoning mixture, garlic, onion, jalapeno, pepper, rest of seasonings, corn. Cook on low for 4-5 hours.
When done, stir in lime juice and cilantro. Spoon mixture into heated tortilla, add cheese if desired, roll up, eat0 -

I don't eat meat but my husband and kids do. I use the crock all the time for pea soup, lentil soup, vegetarian stews (add beans, omit meat, you can modify some traditional recipes). Beans and legumes could great in the crock. I have a "fix it and forget it" crock book that I modify all the time.. it's not vegetarian, but I just add and omit Good luck.0
