Yummy in my tummy!

Just got back from four days of traveling, where I made horrid food choices and had a upside down schedule (twice in those four days I was up for 23 hours at a stretch ). Most places I travel to for work I know where to get somewhat healthy food but.. well anyway, this time was an epic fail. I wonder if it is ok to try to "make up" for days you go over your calories by eating less. I'm pretty sure what I did was not a good thing lol although I did end up "making up for it" by eating hardly anything...part of the thing was not being very hungry due to being too tired to be hungry the last two days. I did somehow keep on my exercise schedule, although only cause I doubled up on one day.
Anyway back home where I have total control yay! I have tried a few recipes from this site and others and wanted to chime in and also thank the people that posted them. I've never been much of a cook and I'm learning a lot about using spices and how to make things tasty without making them unhealthy. It is fun! Today I made mashed cauliflower using this recipe. I used cream of mushroom soup. Its very good!!

I also today made chicken Tikka Masala from this recipe. Other than I had no garam masala and couldn't find it at the grocery so I just put in some of the spices I had that I googled go into garam masala. I loved loved loved this! I put it on top of quinoa, which is something else I have never made until today. I really like the quinoa's taste and texture better than the brown rice I normally use.

I am totally filled up by eating one serving of this chicken over 1/3 cup (well it was 1/3 cup uncooked) of quinoa and about a cup of the mashed cauliflower. I'm amazed.
Last week I made turkey meatloaf mufffins and OMG they are amazing..going to make some more soon and they will be wonderful with the mashed cauliflower!

Next I want to try some quinoa stuffed peppers and quinoa or turkey chili which I have recipes bookmarked for.
Also bought greek yogurt and some coconut oil, looking forward to experimenting with them. I don't like the little yogurt cups, I've tried them before, and something about the texture makes me not like them, but this greek yogurt tastes good to me, its tart, but I like the flavor. Ok pardon my rambling, and I hope everyone is doing well!
