So I love these Zucchini Burgers! I altered the original recipe I found on here and it made it lower in sodium and calories. Here it is

1/2 Cup shredded carrots
2 Farm Fresh Eggs medium
2 Medium raw zucchini
1/2 cup White all purpose enriched bleached flour
1/2 large peeled cucumber
1/4 cup raw onion

Peel and shredded zucchini and set aside.
Place carrots, cucumber and onion in a food processor and blend together. Set aside
Using a cheese cloth or paper towel drain all the juices from the zucchini and mix in with the other veggies
Beat the two eggs and mix into the veggies, Then add in flour

I spilt the mixture into nine burgers. A little smaller then the size of my palm(I have big hands) and about 1/2 inch thick

Fry the burgers about 3-4 minutes each side.

Per Burger:
Calories: 59
Carbs: 10
Fat: 1
Protein: 3
Chol: 42
Sodium: 26

To avoid the cholesterol use egg beaters. probably around 1/2 cup I think.
