spice of the day: corriander

A friend recently told me that corriander seeds should be lightly toasted before using to bring out the flavor, so this morning I went to my garden and harvested some from one of my cilantro plants that had gone to seed. I lightly toasted them and added them to a frittata that we made with fresh locally grown eggs from pastured chickens, chives, onions, garlic, sage and banana peppers from my garden, tomato from the neighbor's garden, left over green peppers, bit of wild mushrooms rehydrated in warm water, and a bit of three different cheeses to use up some left in the fridge. The corriander light up in a lemony burst of flavor in the frittata.

Ten, for dinner I made soup with leftover lamb from last night, homemade vegetable stock, carrots, celery, wild rice and more of the wild mushrooms, garlic powder and onion powder and the rest of the corriander. I had forgotten about the corriander when I was eating and was delightedly trying to figure out wat that amazing spice was as I ate. Then I remembered.

All around, today, toasted corriander and local organic ingredients made for a delicious day.

How have you used corriander? I want to start using this spice more.

    I have yet to use coriander, but oh my after reading this post I suddenly feel hungry and feel that tomorrow I will be experimenting with this spice!

    I used ground coriander tonight in a coconut chicken curry. I also use it in turkey, chicken or tuna salad with cumin and cayenne. It's one of my MOST favorite spices to cook with. Also, when you use it, adding the fresh cilantro with it adds another layer of goodness because they are similar but not the same. Try it!

    I've only ever used it in a witbier. Just a tiny amount.

  • Hello, I'm hindu and I use coriander all the time I'm impressed with you organic garden sounds great.

    You can use it everyday in any sautes curries etc. The main spices to make a curry or lightly saute anything are coriander powder, tumeric powder, chilli powder, jeera whole or ground (also known as cumin) and add salt to taste try these few ingredients along with ginger and garlic to cook up any delicious item. Happy cooking. All spices are good for you in some form or other.

    I put coriander in pretty much everything. One of my favorite is to saute chicken breast (I usually shred the chicken) with ghee (or butter or olive oil), coriander and cinnamon. This spice mix is also really really good on sweet potato fries. Then I whip up some greek yogurt with a bit of curry powder to dip or use as a sauce.

    Today I made delicious homemade salsa: 4 small/medium tomatos, 1 jalepeno, I sweet banana pepper, 1 poblano pepper, 1 medium onion, 1 1/2 tsp toasted and crushed corriander, 4 sprigs cilantro, 1 tsp lemon juice, 2 cloves garlic, dash of salt (about 1/4tsp.). All but the onion and salt came from my organic garden. It was super tasty and low cal with homemade refried beans, very little salt added.
