Yummy vegan raspberry cookies!

Oops, muffins not cookies haha! (edit)
Just made these and fiancé has already has 3, haha! Thought I would share =]
Ingredients:
1 cup whole wheat flour
1 1/2 tsp baking powder
1 tsp cinnamon
1 cup sugar/honey/agave/splenda..( I used organic raw sugar)
1/2 cup unsweetened applesauce
1/4 cup coconut oil, you could use vegetable or canola or butter as well if you prefer
1/4 cup soy/almond/coconut milk ( I used unsweetened coconut)
1/3 cup fresh raspberries , frozen would work also I'm sure
Mix flour, baking powder, and cinnamon in large bowl
Add all wet ingredients except raspberries to dry mix
Stir in sugar until well incorporated
Slowly fOld in raspberries
Divide into muffin tin(2/3 the way full) and use either paper muffin liners or grease pan
Bake at 350 for 20 minutes
Yummy!
With the ingredients I used each muffin is 165 calories, 5g fat, and 3 g fiber!

Something I did that's not in recipe was sprinkle some oatmeal mixed with cinnamon on top of muffins, added a nice flavor and top!0

Sounds super yummy! I have never had success cooking with Splenda(plus don't eat it no more), but I will try it with the Agave or some Stevia0

Same, I tried a few times cooking with splenda and it never was that good.. Agave is awesome and has a lower glycemic index0 -
