Looking for people that have celiac disease

Hello Everyone! I myself do not suffer from this disease, however my mom does. I am looking for some ways to motivate her. She found out over a year ago that she has this and is still angry about it, I think she feels cheated in a way. She has said to me several times that she wants to loose weight and I try to motivate her. I got her to sign up here, but she has never used it. When I ask her why she hasn't started she tells me that there is already so much she can't eat and she doesn't want to have to give up even more. I tried to explain that a protein diet would work for her cause she already doesn't eat a lot of carbs.
So if you could give me some more ideas on ways to motivate her or recipes that you have found that you enjoy I would really appreciate it. I need her to see that she is not the only one out there that is going through what she is going through.

I am sick and getting tested for Celiac, the verdict is still out. If I end up with it, I will let you know.
My ex has celiac, and went undiagnosed for 20-something years. He was THRILLED when he found out, because through dietary changes he no longer vomits every morning.
I'm sorry your mom is going through this -- and is angry about it-- I have an awesome gluten-free, low-cal baked mac n cheese recipe ( I like brown rice pasta better than regular ). So, all I can offer right now is the recipe. Message me if you want :-)0 -

I am on a gluten-free diet because my doctor believes that gluten may be effecting me adversely.
Anyway, I can understand how she feels. I am sure she has been eating in her own style for years and doesn't want to change that. But, I can tell you this: I feel GREAT when I don't eat gluten. I feel lighter and not sluggish at all. Now, I don't even want to eat gluten or cheat-eat it because I know I'll feel horrible.
There is other great news! According to my doctor, gluten can actually hinder weight loss. Therefore, eating a gluten free diet will help her body want to lose weight. (It's worked for me!)
More hope still: there are TONS of gluten free foods out there. Of course, with Celiac there may be more to it, than just avoiding gluten (but, I'll stick with what I can comment on). I know that Whole Foods is the mecca of alternative health foods, and I do buy SOME things there. I don't buy everything there because I'd be broke! General supermarkets have been helping by labeling aisles and shelves that carry gluten free foods! My favorite brand: Udi's. They make bread, bagels, desserts, etc. A little costly, but when you want a bagel, there you have it!
Here are some things that helped me right away: Corn products!
I eat corn pasta- which by the way tastes great! I HIGHLY recommend the Sam's Mill variety. (Even my super traditional Italian uncle eats it up like it's going out of style!).
I eat corn tortillas- these are lower in calories than eating gluten free bread. I make all kinds of wraps with them. Yes, even peanut butter and jelly wraps! heheheheh I warm them a little so they will be more pliable out of the fridge and then load on whatever I want.
I eat polenta or yellow corn meal- this is also lower in calories than pasta. This still always fills me up. It is also fun to add things to it. I usually put homemade tomato sauce over the top.
Fruits and veggies galore and protein galore. These of course are always gluten free.
There are grains that are also gluten free: rice, quinoa, some oatmeal...etc.
There are also gluten free flours for baking, if she decides she wants to test that out! (Check out the Bob's Red Mill Brand).
I think you are super sweet to be asking on behalf of your mom. To show your support you could print a list, offer to take her shopping, and then cook with her. She might not fear it as much if she had a sidekick to test the waters with her. You can laugh about how horrible certain foods taste, or sing praises when you get it right!

One of my sons has ciliac and he is also type 1 diabetic. It has probably been about 12 years since he was diagnosed, but he must have had it for years. His health improved tremendously after he changed his diet. I should think that alone would help your mother to come to terms with this. Where we live (on an island) there are few grocery stores, but they all carry GF foods and quite a variety. If we lived in the city there would be many more choices. Also there are many sources online for GF products. Even at our farmers market there are GF foods. My daughter-in-law makes bread from a mix in the bread machine. Recently my son had gained some weight due to insulin issues, but now he is taking it off. Your mother is making a difficult adjustment and your support will help her.0

i have been living gluten free for over a year because my son is gluten intolerant. I have found it to be very easy and healthier for me. it may be somewhat a challenge for him as he is a teenager. There are so many options out there. I do not eat processed foods anyway and prepare most of my foods from scratch. therefore healthier and I know exactly what is going in my mouth. Perhaps your mom needs to adjust to her gluten free diet first before she jumps into the next lifestyle change. If you need recipe ideas friend me or message me. i have a ton of books from healthy to kid style. Some people aren't going to change until they are ready and too much prodding will cause resistance. Good luck and I think it's great youre looking out for your mom's health.0

Please let your mom know that she CAN eat lots of foods. I am on day 5 of being gluten free and waiting for my test results. I already feel so much better! Yes I do really want to eat a bagel or have something with bread but I know that by doing so I will be very ill. Having said that - I went out for lunch yesterday to Crave. I had sushi rolls that were gf and wild rice/chicken soup. They have a ton of options and I didn't feel cheated at all. I am adjusting to reading every label but it's not so bad. Saturday we had a creamy pesto shrimp pasta made with gf rice pasta. It was delicious. Hopefully your mom can use her imagination to create the dishes she loves. I've also googled bakeries in my area that have gluten free options. There is even gf brownie mix at my local Target! Remember only your mom can change her attitude - she's the only one that can decide to start being happy or continue to sulk. You are doing a great job being supportive.0
