Breakfast casserole for lots of folks

My family and I use this recipe because it make a lot, warms up good and you can eat on it all day if any left.

White Onion Chopped (Correct) , 1 Cup chopped
Tennessee Pride - Hot Sausage, 16 oz
Zatarain's - Enriched Long Grain Parboiled Rice, 3 cup cooked
Sliced Bacon/Hickory 16oz package
Pace - Original Picante Salsa - Hot, 2 tbsp
Eggs - 5 Large Scrambled
Red pepper

Saute onions. Cook everything else separately. Crumble the bacon and sausage. Sprinkle red pepper on rice. Then add all ingredients to the rice. Stir and heat slightly if necessary.
Feeds 12, calories 291 Carbs 11 Fat 11 Protein 8 - per serving.


We like it spicy. You can always use regular sausage and picante sauce if you don't want it hot. Sometime I add a fresh jalapeno and saute it with the onion. Enjoy.
