"Mexican" Pizza

I just wanted to share a creation from supper last night.
Chicken breast sliced thin
Taco seasoning
Refried beans (fat free)
Tortilla shell (I use a high fiber type 70 cal, 12g fiber)
Shredded cheese (I used 2% type)
Cook your chicken in a non stick skillet. When cooked, add taco season and water. Let simmer till most of water is gone.
In a 350 degree oven heat a tortilla shell.
On the warm (even crisped if you like) layer 1/4 cup of beans, 4 oz of chicken, and 1/3 cup of shredded cheese.
Cook in oven until cheese is melted.
Cut like a pizza, place on dish. Top with favorite topping. I did lettuce, fat free sour cream, jalpenos, and salsa.
Very filling and quite a bit of food for around 400 calories! (depending on toppings and calorie variations among brands)
For me, I crave less foods if I will eat things with more flavor and spice!

You could also do this but use sandwich thins toasted and have small mini pizza rounds...yummmy0 -
