Sugar Free, Fat Free, Low Carb Desserts... HELP!

Tomorrow is my best friend's birthday, and she LOVES dessert. She also has problems with her liver, and she's been requested by her doctor to eat sugar free, fat free, and low carb in order to save her liver while they figure out exactly what's wrong. Now she's not much of a cook, and she can't really eat most of the stuff from a bakery because of her dietary restrictions. I'd really like to be able to make her desserts, and thought I'd ask the lovely world of MFP to help me out.

Do you know of any sugar free, fat free, low carb desserts out there? I'd prefer if it's something like a muffin or cupcakes, since we're going to be out and about, and won't have time to put it in the fridge.

    Nature's perfect dessert is fruit.

    A muffin or cupcake would have a high carb load. At least fruit is natural sugar/natural carb. You can grill watermelon slices or grill pineapple slices. We love grilled pineapple w/ a little balsamic vinegar drizzled over it.

    sugar free jello with fat free cool whip? The cool whip might have 1g carb or so, but thats hardly anything....and combined, it really is a great dessert.

    I know its not a baked good, or something that can be left out really....but its all I really know of.

    I am on a similar diet and I love, breads and muffins and cookies. I use Low Carb recipes that use almond flour and I use Stevia for Sugar. I've substituted Almond flour for many of my family recipes, but used 1/3 Cup Almond Flour, 1/4 Cup Wheat gluten and 1/4 Cup Whey Protein flour for 1 Cup flour. For the Sugar, 1tsp Stevia for every Cup of Sugar and 1/3 of a Cup of either unsweetened applesauce or Greek Yogurt, depending on the recipe.

    You can always use Splenda for a sugar substitute and not have to add the applesauce or yogurt.

    I love, love, love Blue Bunny Brownie Sundae ice cream. It's low fat & made with Splenda. I'm not sure where it falls at in the carbs, but it's only 90 calories! YUM YUM!!!

    The recipe has no added fat and is definitely low carb. I'm sure that one could use Splenda as the sweetener.
