Blueberry Shortcakes w/ Heart Healthy Bisquick, Splend, and

Homemade Blueberry Shortcakes

So, I had a bunch of calories to spare tonight and I didn't know what I wanted to eat. So, I decided to make something yummy with the blueberries my dad picked off our blueberry bush (since he's been asking me to make a pie or something with them).

So, I got out the Heart Healthy Bisquick, Splenda, and Organic Fat Free Skim Milk and went to work. I had to kind of hodge podge together a useable recipe between the Bisquick Biscuits and the Strawberry Shortcake Recipes on the back of the box. So, this is what I came up with.

3 Cups Heart Healthy Bisquick

4 Tbsp Splenda

2 1/2 Cups Organice Fat Free Milk

1 Cup Blueberries

Mix the Splenda and Milk together. Then slowly begin to add the Heart Healthy Bisquick just a little at a time. Once you notice the batter starting to thicken add the blueberries and stir gently until combined. Then add the rest of the Heart Healthy Bisquick mix and continue to combine until it is mixed thoroughly throughout.

Once it is all combined drop large spoonfuls of the mixture onto an ungreased cookie sheet. It should make about 18 palm sized shortcakes.

Each Shortcake only has about 88 calories in it so it's not too bad for a sweet treat!

I worked all the numbers (except for the vitamins and minerals) and added it to the database in case anyone would like to try it.

    I guess you need to know how long to bake it LOL Preheat the oven to 425 degree F When ready, Bake for 12 mins on middle rack. or until you see the tops start to turn a golden brown.
