Help me cook dinner!

I'm in the mood for enchiladas and would like to make them for dinner tomorrow. I wanted to try some different ingredients and came up with these fillings:

shrimp
poblano
spinach
garlic
onion

I've always made the traditional ground meat, canned sauce, and full fat cheese version---so I'm not really sure how to incorporate all of these together and make it low cal and awesome. I'm pretty sure a white or green sauce would be best. Any suggestions on how to pull it all together?

And I've never used poblanos before--any help?

  • Poblanos are a mildly spicy pepper, so depending on how hot you like it would dictate how many to use. Personally, I love to roast poblanos first. (They taste great in guacamole.)
