After losing a little weight (need to lose 30lbs), here are the changes i have noticed so far:

Endurance during exercise varies greatly; somedays it is barely possible to do 20 minutes vs 40 on other days at higher level
Eating a big meal (cheat day)allows for a great workout afterwards
Doing a little weight training, but not gaining strength
Do not get a good pump doing weights
Oversleeping, although good deep sleep
Get the worst munchies, especially sugar hour before bedtime

    you dont state your height, but as a male 1200 Kcals is way to low that amount is for a female males should be looking at around 1800 Kcals a day

    Hopefully you don't have cheat days very often, because of course they can sabotage any healthy lifestyle. What I can say about the workouts is that it is physically impossible to truly be working yourself and not see results unless you aren't doing this correctly. The entire purpose of a workout is to raise your heart rate, to find out what your rate should be go here http://www.bodybuilding.com/fun/moser9.htm

    The way to truly know if you are doing this right is if you are sweating during workouts. And I mean sweating BUCKETS. As far as the weight lifting, you should be lifting enough to be able to do say one rep of 10 but have some pain during a second or third rep of 10 but you shouldn't be lifting enough that it is too painful right off the bat.

    As far as the sleeping, sometimes I find that if I let myself sleep too long then bad health is a result. Perhaps invest in an alarm clock.

    If you crave sugar before bed, eat some sweet fruit rather than ice cream or whatever else. Much better for you. Don't forget to budget calories for your snacking either.
