Indian masala egg curry
Eggs - as many as you are cooking
Oil - 1 tbsps
Onions, sliced - 1
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp (optional)
Coriander powder - 2 tsps
Garam Masala powder - 1 tsp
Salt - to taste
Skim milk (optional) or a little water
METHOD
1. Boil eggs and peel.
2. Heat oil in a pan.
3. Saute onions till light brown.
4. Add turmeric powder, chilli powder, coriander powder, garam masala and saute for a while. Add a little water not too much just a little to cover quarter of the egg.
5. Add the boiled eggs and coat them generously with the mixture you made.
6. Add milk if using. (i prefer to use a little to thicken the curry if not let the water simmer till you have enough curry)
7. When the dish reaches a slightly thick consistency, remove from the fire.
ENJOY!

I've always wanted to try to make an Indian dish....I have all of the spices so I made it tonight for dinner. I did modify it a little - I needed to add some calories.
I used 4 eggs and I used coconut oil to sautee the onions.
I wanted to add a vegetable to it - the only thing I had was frozen butternut squash cubes. I added 2 cups.
In place of milk I used 1/2 can of coconut milk.
The I topped it with several sprigs of fresh cilantro.
This fed 2 of us and we were both stuffed - it was awesome. With everything I added it came to about 500 calories per serving...perfect!
