My family generally doesn't support my healthy eating and exercise, they think I'm some kind of crazy person most of the time. My father normally refers to my food as "prison food", so I was incredibly surprised and overwhelmed tonight when he raved over a meal I cooked for the family. He said it was one of the best meals he's ever eaten and just went on and on about how much he loved it. What an amazing feeling! I never thought I'd hear those words from my father, especially in regards to an arguably very healthy meal: a Thai Spiced Coconut Steamed Red Snapper with Curried Ratatouille.

So to all of you struggling with unsupportive families/significant others, etc, keep doing what you're doing and remember there is hope for your loved ones to come around in their own time.

    What a wonderful Feeling!! As you probably well know eating healthy does not have to be boring or tasteless. I am finding sometimes it tastes far better.

  • I totally understand the non-supportive family deal. My family is continually super shocked that I keep losing weight and refer to it as my "diet" (which indicates that it will end at some point) and while they love that I'm doing it and compliment me on how I look, they also assume TONS of stuff and tell me that I'm depriving myself (deprivation = I don't eat fast food, drink soda, and don't allow myself to eat pounds of candy every week).

    Great job on your NSV! That's awesome! Looking forward to having one of those moments in my own family. =)

    Great job! I figure it this way, if you don't like what I cooked, you can always make your own food, or spend your own money on fast food.

    My family is, but isn't supportive, my mom said she refuses to give up her wine toloose weight, and the other day, when I was excited about losing another pound, i called to tell her that, she told me she lost 3 pounds, without nay changes. Also that she weighs like 10 pounds less then me, how is that possable, I have a few pairs of her jeans that she is to big to wear, and they fit me great, actually a little big in some areas.
    instead of support from my fiancee when I tell him, and was obviously bummed out about it, he said nothing, just talk to me about it later.

    I'm proud of myself, and everyone here, and no matter what the family says, lets do this, and make them look bad, not us!

    Sure thing. It's basically a thick sauce that I rubbed on the fish before cooking it. I have this terracotta fish pot that I use to cook, it's not technically steamed, but similar kind of thing.

    2 cloves garlic, minced
    Fresh ginger, minced
    Lemon juice
    Splash of soy sauce
    Sesame oil
    2 Bird's eye chilis (dried), chopped with seeds removed
    1-3 tablespoons melted Coconut butter (I used homemade which basically was just dried unsweetened coconut processed in the food processor until smooth), you could probably also use light or regular coconut milk or coconut cream
    Rice Wine Vinegar

    Heat up all the ingredients in a small saucepan until smooth-ish. Brush mixture onto fish and bake (or grill). I also thinned out the extra marinade with a bit of stock to make a sauce to serve the fish with.
    Sorry it's not more specific, but a lot of the ingredients are kind of "to taste" and depend on how much you're making. This would probably work on pretty much any kind of fish, I used a big filet (700g or so) of fresh red snapper with the skin on.

    The curried ratatouille is pretty simple. Just chop up whatever veggies you like (I used onion, tomato bell peppers, carrot and zucchini) and saute in a bit of olive oil, then add some coriander and whatever curry powder you like. I used a mix of homemade curry powders.
