Simple Substitutions for Holiday Baking

Instead of: -- Use:

1 c. wine -- 1 c. OJ

1/2 c. oil -- 1/2 c. applesauce

1 c. sugar -- 2/3 c. sugar

1 T. margarine -- 3 T. ground flax seed

1 egg -- 2 egg whites

1/2 c. pecans -- 1/4 c. toasted pecans

1 C. sour cream -- 1 C. plain yogurt

1 c. evaporated milk -- 1 c. fat-free evaporated milk

1/2 c. mayonnaise -- 1/2 c. fat-free mayonnaise

1 T. oil for sautéing -- 2 T. frozen apple juice

    I know a lot of recipes call for splenda too to replace sugar. I made a pumpkin pecan pie with the granulated splenda. In my opinion, splenda sucks. It tastes like cancer to me. I like how the conversions listed above to not include artificial sweeteners, just healthy replacemements. Thanks for the info!

    Can anyone tell me how stevia (the packet kind) does with baking? I'd love to experiment with it, but I don't want to wind up with a huge pile of pumpkin-esque sludge. A little forewarning would be great!
