COUSCOUS WITH ROASTED ALMONDS AND EDAMAME
I found this recipe in a fitness magezine and tried it yesterday. It was pretty good. I got my sister and my daughter to eat it!
servings: 4
1 med. clove garlic
1 1/2 cups carrot juice
1/4 tsp salt
1/4 ts freshly grnd blk pepper
1 1/2 cups frozen shelled edamame
2 med. scallions
4-5 sprigs fresh cilantro
3/4 cups couscous
1 oz roasted, unsalted almonds
Mince garlic to make 1 tsp. In a 1 1q/2 qt soucepan, combine garlice, carrot juice, salt and pepper. Bring to a boil over high heat. Add edamame and return to a boil. Reduce heat to low, cover and simmer 4 min.
While edamame simmers, chop scallions to make 1/2 cup and cilantro to make 2 tablespoons; set aside.
Increase heat to high and return edamame to a boil; stir in couscous.
Cover, remove from heat and let stand 5 min. Meanwhile, chop almonds. Fluff couscou with a fork; andd scallions, cilantro and almonds.
