*** Loaded Mashed Potatoes - 83 cals per generous serving! *
How can something that tastes so deliciously bad for you be so low in calories??? These loaded mashed potatoes taste like something you would get from Outback Steakhouse with 500 or more calories!!!
Loaded Mashed Potatoes
Packet instant mashed potatoes, unprepared (I use Costco's Honest Earth brand - 24 Tbsp dry per packet)
1 cup unsweetened vanilla almond milk
1/4 cup real bacon pieces
1/4 cup light spread (I use Country Crock Light)
1 cup shredded cheese (I use a fiesta blend)
4 stalks green onion, finely chopped
salt and pepper, to taste
Prepare instant mashed potatoes according to package directions, substituting almond milk for regular milk and light spread for butter. Add bacon pieces and green onions, mix thoroughly. While still hot, place in small casserole dish and sprinkle top with shredded cheese. Place in oven on low broil for 5 minutes or until cheese is well-melted and bubbly. Makes 16 1/2-cup servings.
