Pineapple Chicken

I made this last night and my DH who hates chicken...cleaned it up! In fact I have NO leftovers for lunch today :sad:

Ingredients....
1 lb boneless chicken breast (trimmed)
1 TBS flour
salt & pepper to taste

1 TBS roasted garlic oil
2 TBS honey
1/2 cup pineapple juice
16 oz pinapple chunks in juice
2 TBS low sodium teriyaki sauce
2 tsp cornstartch


Trim chicken and dice up into small bites. Combine with flour, salt & pepper in a ziplock bag and shake up till well coated. Heat oil in the pan and add chicken to brown. I tend to put a cover on it for faster cooking and it plumps up and is rather tender.

While chicken is cooking. Drain pineapples and set aside 1/2 cup of juice. In a small bowl, combine juice, cornstarch, teriyaki sauce and honey. When chicken is cooked, add sauce and pineapples. Will thicken up within one minute. Serve with brown rice and enjoy! :love:

Sauce has been doubled since my DH loves to mix it in with his rice. Feel free to cut the sauce in half if you prefer.
