I've never cooked fish before so I am no help. :P But I just wanted to say good for you but making healthy and compassionate transitions.0

I usually stick to flash frozen tilapia. I buy a big bag of it at the store. I usually prepare it pretty simply with a drizzle of olive oil, creole seasoning, garlic salt, and a dash of ground red pepper. You can do that while its still frozen. Bake at 350 for 25-30 mins and serve with steamed rice and veggies. Good quick meal. You can also grill it on wood planks.0

We like to grill mahi mahi and cod. I also like halibut and swordfish, but they're pretty expensive. I stay away from tilipia, mostly because of an episode I saw of Dirty Jobs. They're bottom feeders and their diet is pretty disgusting.
I usually just put some sort of lemmon pepper or lime mango rub on them and bbq.0 -
Sounds good.. thanks everyone0

Here are some of my fish meals:
any firm white fish fillet, or salmon steak topped with pesto and wrapped in foil and oven baked for 15 mins
Firm white fish strips marinated in paprika, cumin, cayenne pepper & lime juice then grilled (broiled in US speak) and served in tortillas with salsa & lettuce.
Fish fillets mariaded in teryaki marindade then steamed/ baked in a foil parcel with greens (spinach or cabbage or oriental leafy veg) french beans, spring onions (green onions/scallions) and some chopped chilli peppers & fresh root ginger.
fish baked in tomato sauce made with a tin of chopped tomatoes, chopped garlic, fresh basil & chopped black olives. Cover the fish & bake for 10-15 mins.0 -
I luv this dish.. Chinese steamed fish in 6 minutes. Place, the desired fish in a microwave steamer or if you don't have one-use a perforated microwave safe utensil kept on top of a bowl of water with the same perimeter. Steam the fish, slices of ginger-garlic with some julienne veggies for 6 min on medium(my microwave reads so...) setting. Insert a fork to check if the fish is done, else let it run for another 3 min. Place the fish on a plate, add some soy sauce n enjoy!!!!0

I like to go to a SAM'S club and get frozen tilapia, flounder, or cod. they all already have a coating of some kind and are ready to bake. My kids really like these too. For them to eat fish I hit the jackpot when I found these in the frozen sections.0
