I made this for dinner last night and wanted to share the recipe here! It is so simple, delicious and filling.
Foil Packet White Roughy
Heat oven to 425. While that is heating, place onto the center of a large piece of foil the following:
6 oz White Roughy fillets (could sub orange roughy if you can't find white)
squeeze part of the juice of 1/2 lime over the fish
sprinkle with:
sea salt (I used a Smoked Sea Salt from Trader Joe's)
cracked black pepper
cumin
chili powder
1/2 c frozen roasted corn
1/2 c rinsed and drained black beans
4 Tbsp medium, chunky salsa
and another sprinkle of cumin and chili powder over this
Squeeze the rest of the lime juice over everything
Wrap foil into a pouch, making sure ends are tightly wrapped.
Place on a baking sheet and roast for 20-25 minutes, or until fish flakes with a fork
While the fish is in the oven, wash and trim 10 spears Asparagus.
Place in baking dish sprayed lightly with olive oil to prevent sticking.
Sprinkle 1 minced clove of garlic over asapragus, along with a good bit of cracked black pepper and sea salt (again, used the smoke sea salt.)
Drizzle 3/4 tsp of olive oil over asparagus, toss to coat well and roast for 10-15 minutes.
