Don't Eat Enough

I actually started a week ago tomorrow, and what I have learned thus far is that I don't eat enough. I have 3 jobs and go straight from one to the other 4 days a week. I find it very hard to plan meals because I leave very early in the morning, get home late at night and I don't have time to cook. So...that's me in a nut shell, would love any advice about easy healthy meals so I can start breaking the 1000 calorie mark.

    I am a busy single mom of 3 kids who also works full time. The trick I have found is to plan ahead. Can you cook on the weekends and freeze stuff in portion size? Try taking 10 minutes before bed to get your food together for the next day so that you can just grab and go the next morning. I really need to plan my meals and go to the grocery store and shop accordingly. Good luck! I know what a challenge it can be to plann and eat well.

    You could take one of your days off and cook up some food bag it freeze or fridge it and there ya go. Meal on the go!

    I agree with Mumster.

    On the weekend, or a day off or some extra time,
    try planning your weeks meals.
    Easy meals you can prep and put in the fridge or frezer in your portion sizes so they are grab and go or easy to thaw and eat.
    Saves lots of times, and great way to make sure your eating right.

    Plan ahead and pack a soft sided cooler bag. There are certain days my husband needs 3 meals and I plan them all and use snack bags for his little portion controlled snacks. We also cook more than we eat and portion the leftovers in containers to be used again for lunches/dinners during the week.

    I pack tons of stuff to take w/ me to work... not only to eat well throughout the day, but to keep me satisfied when walking by the tray of donuts in the break room. Its become habit and a great way to plan. My standard day looks like:

    BREAKFAST:
    - Oatmeal or Cereal w/ milk: roughly 250 cals.

    WHILE AT WORK:
    - Snack - 1.5 ounces of mixed nuts: 150 cals
    - Snack - Banana: 110 cals
    - Snack - Granola Bar: 150 cals
    - Protein Shake: 130 cals
    - Lunch at work: Sandwich or Wrap w/ cheese, lettuce, tomato, and turkey: 350 cals

    So before dinner even starts I have a total of roughly 1,140 calories. Now I'm on a higher cal intake so I'm adding flax see oil to breakfast and more protein shakes and maybe an extra snack. But as you can see from above, the only thing I'm really preparing is the sandwich. Also, I'll usually have brown rice, black beans, whole wheat pasta, and/or chicken from dinner leftovers (I cook extra). So I'll mix those in for lunch since they're pre-cooked. Hope that helps!

    Bring snacks like fruit, granola bars, yogurt, etc. If have access to a freezer and microwave, take healthier frozen meal like lean cusine or healthy choice. Healthy choice also has the microwave steamer things (in the soup aisle); I'm not a huge fan of them but everyone is different. Also, try getting a cooled lunch pack and pack a healthy lunch the night before, and refridgerate it all night so it won't go bad by lunch time. You can also get those ice packs that are made for lunches and will help keep it cold also.
